l am sorting out a cake for my parents anniversary but dad has type 2 diabetes and l have not a clue what kind of cake he can eat, (he has only just been diagnosed so we do not know much about it yet)
is it just the sugar that is the problem or is there another ingredients in a cake that he cant eat.
l mean would a sugar free cake be ok or does anything else have to be substituted aswell?
He is not sure what he can eat so he has stopped eating most things until he finds out.

My mother is also diabetic & has discovered Fruitsana ( l think it is called that or something very similar!) This can be used in cakes & anywhere else u use suger. As it is fruit suger it is broken down in a different way by the body so is OK for diabetics. You could try making a fruit cake using this. She has made chocolate cake, fruit cake, coconut cake, ice cream, chocolate mouses any loads of other things & u cannot tell the difference. It has been so good that she is now looking at setting up a cake making business for diabetics!

Carbs are the problem, not just sugar. What he can eat depends on how serous the diabetes is. For some, the occasional cake and ice cream is OK, for others, no.

l would go ahead with the cake and ice cream, but have something else, like birthday ''cottage cheese'' or something on the side.

Some people give very general , clearly not diabetics!

A lot of diabetics choose just not to eat cake or anything sweet at all, particularly if it is fruit cake.

Dried fruit should be avoided because of the concentrated levels of sugar. Also berries such as strawberries. However, blackberries, blueberries & raspberries r ok. Jam is also something which has very high sugar.

On the other hand, the occasional piece of cake wo not do any damage as long as ur dad is up to date with his meds & takes care of himself. The problems occur when too much sugar & carbs r consumed over a long period of time. Your dad will know which foods will make him feel ill, & cake could be one of them!

My bf has type 2, & is pretty well behaved, but he is partial to a bit of fruit cake every now & then... :D HTH

A lot of type 2 diabetics can eat the occasional piece of cake as long as they plan it into the days carb intake. Ask your dad whether he can eat cake or is there anything else he could eat and put the candles on that.

Frankly, many diabetics would consider that a piece of cake on their wedding anniversary is entirely OK.

Diabetics need to avoid sugary & fatty foods in general everyday life, but a very occasional piece of cake on a special day is not going to be the end of the world.

In general, people with type 2 diabetes should eat plenty of fresh vegetables, some fresh fruit, fresh lean meat (unless you're vegetarian) & some complex carbohydrates (e.g. potatoes, rice, pasta, bread). It is best not to eat huge amounts of bread or pasta etc. And wholemeal bread & pasta r better for diabetics than white bread & pasta. Tea & coffee r fine in moderation as long as no sugar is added. Fizzy drinks should be avoided, although a little diet cola or whatever is OK. Fruit juice is usually very high in sugar, so just a small glass with breakfast, if at all. Plenty of water is good.

Dairy products r OK in small amounts, but there is so much fat in cheese that it really has to be *small* amounts. (Fat is not very good for diabetics.) Eggs r good once a week. Fish is very healthy as long as u do not cover it in mayonnaise!

But the main point to remember is that quality of life is important. And having cake on a person is wedding anniversary is about quality of life. As long as it is not a regular event, a slice of cake really wo not do any lasting harm.
